Cures colds

This chicken soup is just like the kind your mama used to make. Well, my mama’s recipe left out the MSG, dark meat, mashed potatoes, and I’m fairly certain she used “no yolks” egg noodles. Since I’m the one cooking my comfort food these days, I like to throw in a little extra goodness.

  • 1 Free Range, Organic Chicken
  • 1 Bag of Wide Egg Noodles
  • 1 Large Sweet Onion, chopped
  • 3 Celery Stalks, chopped
  • 6 Small Potatoes, quartered
  • 2 Chicken Bouillon Cubes
  • Salt, dash

Wash chicken and place in a large pot. Fill with water to cover the chicken, add bouillon cubes and salt. Bring to a boil. When it’s done it’ll almost be falling off the bone. Take it out of the water, let it cool, and then pick off all of the meat.

Put the meat back into the pot. Add celery, onion and wide egg noodles to the broth. Cook until the noodles are just tender.

While you’re waiting for the noodles to cook, cook potatoes by placing them into a pot of water seasoned with a pinch of salt. The water should just cover the tops of the potatoes. Bring water to a boil and cook until tender. Drain most of the water, add a splash of milk and a pat of butter, then mash potatoes until desired consistency is reached. Add salt and pepper to taste.

Ladle soup into bowl and add a dollop of potatoes. Season to taste.

As for the no-knead bread, I used the recipe featured in the NY Times and it came out really well. But I’ve seen a lot of people modifying the recipe to their own personal taste. Not Martha has listed some excellent suggestions. This bread is super tasty alone, but nothing beats buttering up a hot slice and dipping it in the soup.

The soup recipe makes quite a few servings. You can pare it down or make a big batch and freeze what you don’t want right away. And trust me, it’s killer.
